Ingredients:

2 Eggs
Cheese
Red and green bell pepper - diced
Onion - diced
Ham

Instructions

Sautee vegetables until soft. Beat eggs and two teaspoons of cold water with a fork. Spray non-stick skillet with cooking spray and preheat over medium high heat. Pour eggs in and swirl skillet until the eggs are evenly covering the bottom of the pan. Add cheese and other ingredients to one half of the eggs. When egg is almost cooked and cheese is melted, fold over and slide off the pan onto a plate.
