Ingredients:
2 tablespoons olive oil
1/2 medium onion finely diced
1 cup long grain rice
1 can Rotel tomatoes
3 cups chicken broth
3 cloves diced garlic
2 teaspoons kosher salt
Instructions:
Preheat 10" frying pan with olive oil. Saute onions and rice in oil until rice is brown and onions are translucent. Add Rotel, garlic and salt. Stir. Add broth and bring to a boil. Reduce heat to medium and cover. Cook for 22 minutes. Do not remove lid until done!
