Ingredients:
1 Tbsp olive oil
1 cup onions, sliced
12 garlic cloves, smashed
1 tsp sugar
1 cup dry white wine
1 quart chicken stock
1 bay leaf
2 cups French bread, cut in 2 inch pieces
3/4 cup heavy cream
salt and pepper to taste
1/2 cup grated Gruyere cheese, or any cheese
Heat oil in a large pot. Add onion and garlic, cook over medium heat for 10 to 12 minutes total. Add sugar, salt and pepper after 5 minutes. Add the win and continue to cook for 10 minutes.
Place bread in blender with 2 cups of stock. Blend until smooth. Place into sauce pan. Place onions, garlic and wine in blender. Blend until smooth. Add to saucepan with bread. Add remaining stock and bay leaves. Simmer 30 minutes. Add the cream and adjust the seasonings. Serve in a large shallow bowl. Garnish with cheese.
