Ingredients:
4 lbs sliced onions
2 quarts beef
stock
1 cup white wine
1/2 cup brandy
2 Tbsp minced garlic
2 tsp sugar
3 Tbsp butter
2 Tbsp olive oil
4 Tbsp flour
1/2 tsp dried thyme or 2 sprigs fresh thyme
French bread
Gruyere cheese
Saute onions in butter, olive oil and garlic for 8 minutes. Add sugar, saute until golden brown - 20 minutes total. Add flour, stir for one minute. Add wine, stir for one minute. Add beef stock and thyme. Simmer for 45 minutes. Add brandy, simmer for 5 minutes. Salt and pepper to taste.
Slice and toast French bread under broiler on both sides. Add Gruyere cheese to one side and let melt. (May use Swiss or mozzarella cheese if Gruyere is not available.)
Place cheese toast in bottom of bowl. Ladle soup over bread. Sprinkle a little extra cheese on top and serve.
