Ingredients:

4 cups chicken stock
2 larged diced baking potatoes
16 oz frozen mixed vegetables
1 diced yellow onion - sauteed in butter
4 cups diced chicken
1 cup milk
2 Tbsp butter
2 Tbsp flour
poultry seasoning to taste
salt and pepper to taste

For crust:
2 cups flour
1 tsp salt
1/2 cup extra light olive oil
1/4 cup ice water

Cook potatoes and mixed vegetables in chicken stock until soft. Strain vegetables and reserve stock. Melt butter in pan and add flour. Add reserved chicken stock and milk, stir until slightly thickened. Add sauteed yellow onion, chicken, and vegetables. Heat through and season to taste. Put chicken mixture in 13" X 9" baking dish. Roll out dough to just larger than the pan. Place over chicken mixture. Brush top with egg wash. Bake at 375 degrees for 20 to 30 minutes or until brown.
